1. Raw Milk
Raw milk adds a creaminess to the base that creates the most delicious cheese sauce.. If you don’t have your own dairy cattle, I suggest sourcing raw milk from a trusted farmer. This website may help you find one local to you. And if raw milk isn’t a good fit for your family, it can easily be subbed for equal parts with any milk or milk alternative.

2. Cream Cheese
Cream cheese adds a rich, smooth, and slightly tangy flavor helping create a soft and velvety finish.

3. Raw Cheddar Cheese
Cheddar cheese brings a bold, savory flavor and melts beautifully, making it a go-to for comfort foods and appetizers. Its rich taste and smooth texture add depth to everything from sauces to baked dishes.

4. Dijon Mustard
Dijon mustard offers a smooth, tangy flavor with a subtle kick. Its balanced sharpness enhances the savory aspects of this dish without overpowering them.

5. Worcestershire Sauce
Worcestershire sauce is a savory, umami-rich ingredient that adds depth and complexity to sauces, marinades, and meats. Just a small amount enhances flavor with its tangy, slightly sweet, and bold profile. Make sure to source a gluten free version. I use this one.

6. Salt
A small amount of salt balances the flavor of the cheese and makes for a savory sauce.

Recipe Tips

Use freshly shredded cheese for the smoothest melt (pre-shredded can clump)

Keep heat low and steady—high heat can cause graininess

Stir constantly for a smooth consistency

If sauce thickens too much, add a splash of milk to loosen

Add cheese gradually to help it melt evenly

For extra smooth texture, use a blend of cheeses (like cheddar + monterey jack)

Recipe FAQs

Cheddar is classic, but mixing cheeses like cheddar and monterey jack gives a smoother texture.

Cheese sauce gets gritty when its heated to quickly and it overheats. Cheese proteins tighten and separate when exposed to high heat. Lowering the temperature and stirring in a bit of warm milk can help fix it.

Worcestershire adds a subtle savory, umami depth that enhances the cheddar flavor without making the sauce taste overly tangy. It’s a small addition that makes the sauce taste more like a classic pretzel shop dip. You can omit, but the depth will decrease within the cheese sauce.

Dijon mustard adds a mild tang and helps balance the richness of the cheese. It also slightly improves the emulsification, helping the sauce stay smooth. You can make it without, but it’s a great addition.

Use low heat, add milk gradually, stir constantly, and incorporate the cheese in slowly to allow it to melt more evenly and avoid clumping.

medium or sharp cheddar works best for flavor. Freshly shredded cheese melts more smoothly than pre-shredded, which often contains anti-caking agents.
