A trifle is a layered dessert traditionally made with cake, fruit, custard, cream, or a combination of fillings. This version keeps things simple with four main components:

Vanilla Cake: Soft pieces of cake create the base and soak up some of the strawberry flavor.

Fresh Strawberries: Juicy sliced strawberries add freshness and balance the richness of the cream.

Strawberry Whipped Cream: Adds an extra layer of strawberry flavor while giving the trifle its beautiful pink layers.

Chantilly Cream: Chantilly cream balances the strawberry layer and keeps the dessert light and fluffy.

Ingredients for Strawberry Trifle

1. Strawberries
Fresh strawberries diced into tiny pieces adds fruity, flavorful bursts to the trifle. Farm fresh is always my recommendation!

2. Chantilly Cream
Chantilly cream is light, fluffy and a delicious twist on a generic whipped cream topping. It elevates the sweetness subtly and creates a perfect balance for this dessert.

3. Gluten-Free One-to-One Flour
A high-quality gluten-free one to-one flour blend provides structure while keeping the cake shape fluffy. I prefer Bob’s Red Mill Gluten-Free 1-to-1 Baking Flour for this recipe because it produces consistent results and bakes evenly. Be sure to use a one-to-one blend that already contains xanthan gum.

4. Raw Cream
Raw cream is simply the naturally separated cream that comes from raw milk. If you do not choose to or have access to drinking/using raw cream, it can easily be substituted out for heavy whipping cream or coconut cream (for a dairy free alternative). The cream is used to drizzle over the proofed rolls and help them to maintain moisture while they bake.

5. Graham Crackers (GF)
Gluten free graham crackers can be store-bought, or if you have my Everyday Staples Cookbook or the Gluten Free Kitchen App, you can make the most delicious clean-ingredient homemade graham crackers.

6. Butter
Butter adds richness and helps create a beautiful crumb in the crust. Using a high-fat butter like Kerrygold works especially well here. If you need a dairy-free option, you can substitute a dairy-free butter alternative without issue.

7. Vanilla Extract
Vanilla extract rounds out the cheesecake and crust flavor and adds warmth. Use a pure vanilla extract for the best results.

8. Millet Flour
If using fresh milled gains, I get these from Azure Standard (US based option), Amazon, or Bread Becker. If using already milled grains (similar to just picking up flour at the store) I use Bob’s Red Mill or Anthonys. Millet is one of the oldest cultivated grains and is naturally alkaline, making it easy to digest. It’s excellent for tender cakes, flatbreads, and sandwich breads. Its mild flavor complements sweet and savory dishes.

9. Maple Syrup
Maple syrup provides natural sweetness while adding moisture and depth to the dessert. It also helps create a smooth, cohesive texture without refined syrups.

10. Sour Cream
Sour cream plays a key role in creating a smooth, creamy cheesecake with balanced flavor and texture. Its natural acidity gently softens the richness of cream cheese, preventing the cheesecake from tasting too heavy while adding a subtle tang that enhances the overall flavor.

11. Eggs
I’m a big fan of supporting local farmers and using farm fresh eggs. It’s also important if you’re navigating more anti-inflammatory foods to source pasture raised, non GMO, corn and soy free eggs. If you need to be egg free, my favorite egg replacer isBob’s Red Mill Egg Replacer. I’ve used it within this recipe and it came out amazing! For this recipe, the whites are needed, so I’d use the excess yolks to make ice cream!

12. Salt
A small amount of salt balances the sweetness and enhances the chocolate flavor. Don’t skip it—it makes a noticeable difference.

13. Baking Powder
Baking powder gives the dough just enough lift. I recommend using corn-free and aluminum-free baking powder, which is easier on digestion and keeps the flavor clean. This is my go-to option for all gluten-free baking.

14. Raw Milk
Raw Milk is milk without pasteurization. The milk goes from the cleaned cow into a bucket and then strained before consumption. In recipes, it works exactly the same as pasteurized milk, the main difference being the bioavailable nutritional components that are present with raw milk. If you do not choose to or have access to drinking/using raw milk, it can easily be substituted any milk of choice (dairy or dairy free alternatives)..

15. Baking Soda
Baking soda acts as a leavening agent that creates a soft, slightly fluffy and chewy texture. Be mindful of which baking soda you use as many contain unnecessary ingredients. I prefer to use this brand.

16. Maple Sugar
Maple sugar adds sweetness with a subtle caramel note that pairs beautifully with the cake. Using maple sugar instead of refined white sugar keeps the flavor warm and well-balanced.

17. Powdered Sugar
Powdered sugar (also called confectioners sugar) creates smooth, fluffy frostings, glazes, and fillings with that classic melt-in-your-mouth texture. For the cleanest option, look for organic or tapioca-based versions without cornstarch, or blend your own at home for a simple, from-scratch swap that keeps ingredients wholesome and allergy-friendly.

18. Strawberry Powder
Freeze dried strawberries, ground down into a fine powder creates an easy way to add strawberry flavor blast into ingredients without having to use fresh, wet strawberries. The dry powder mixes in perfectly with the strawberry whipped cream and makes it so delicious!

1. Pre-prep ingredients (cake, dicing strawberries, making the whip, crushing graham crackers).

2. In a trifle dish or cup press down the graham cracker base.

  • 1 cup Strawberries

Instructions

Prep the Cake Layer

  1. In a mixing bowl, combine all of the ingredients for the cake layer until well combined. Then cook at 350°F for 18-20 minutes. Once done, let cool and cut out small cakes to fit inside of the jars.

Prep the Strawberry Whip & Chantilly Cream

  1. Visit the Chantilly Cream recipe linked above and follow those instructions. For the Strawberry Cream, mix all of the ingredients together until thick and fluffy.

Layer the Trifle

  1. Graham Cracker, strawberry whip, fruit, cake, strawberry whip, Chantilly cream, fruits.
  2. Refrigerate for 4 hours (or overnight) to allow the flavors to set within the layers and enjoy!

Recipe Tips

Cool the vanilla cake completely. Even slightly warm cake can melt your whipped cream.

Use ripe, flavorful strawberries because they’re one of the main flavors in the dessert.

Cut the cake into relatively even cubes so the layers are easier to build.

Pat freshly washed strawberries dry before slicing them. Excess water can make the trifle watery.

Whip the cream until it holds its shape, but don’t overwhip it or it can become grainy.

Save your prettiest strawberry slices for the outside of the trifle bowl and the top.

Don’t press down on the layers. Keeping everything light creates a much prettier finished trifle.

For defined layers, spoon or pipe the whipped cream rather than aggressively spreading it.
