Making the Gluten Free Smash Burgers
The step-by-step guide to making gluten free smash burgers:


1. Thaw or defrost meat if using from frozen. (I was prepping for a large event, hence why I’m using so much meat!)
2. Chop into chunks with a spoon or spatula.


3. Season with salt and adobo.
4. MIx meat and seasons (I use my hands).


5. Separate the meat into 4 oz balls.
6. Prep the tortillas.


7. Place on tortilla (you can use fresh or frozen – frozen is pictured).
8. Press the meat into the tortilla. You can also skip the tortilla part and just use the circle ball to smash down onto the skillet or grill.


9. Preheat a skillet or grill and place meat down to cook.
10. Cook most of the way through and flip to heat the tortilla and other side of the meat.


11. Load with fillings and fold into a burrito.
12. Use a burger smasher and press down on the tortillas on the grill to cook them until golden brown. They should hold their shape at this point.

Gluten Free Taco Smash Burger
Instructions
- Season the meat with salt and adobo.
- Separate the meat into 4 oz balls.
- Preheat the flattop grill or skillet. It needs to be hot and well oiled.
- Use a piece of parchment paper and a burger smasher to push down on the 4oz patty until it is very thin and flat.
- Place a tortilla wrap on top of the burger pressing into the meat and let it all cook through for a few minutes. The meat will brown.
- Once the burger is browned and cooked almost all the way through, flip it (and the tortilla) over.
- Remove the tortilla with the patty and place it on a flat surface. Add cheese, lettuce, burger sauce, and caramelized onions (optional) to the tortilla and wrap it up.
- Place the wrap back on the grill or skillet and use the burger smasher to push the burger down and set the tortilla in place as it browns. After a minute or so, flip the wrap and repeat with the other side.
- Cut the wrap in half, dip in more burger sauce and enjoy.

Press meat thinly onto tortillas for even cooking
Don’t overcrowd the pan—cook in batches if needed
Use smaller tortillas for easier flipping

Prep/Storage Options:
- Make and freeze: The smash burgers are perfect for making in batches and then freezing. Wrap in parchment paper. Once frozen, bag them up and freeze for up to 6 months. Reheat in the oven at 350°F for 12-15 minutes or air fry at 350°F for 8-10 minutes.
- Refrigerate: Once the smash burgers are made, they can be stored in an airtight container for up to a week in the refrigerator. Reheat in the oven at 350°F for 10-12 minutes or airfare at 350°F for 8-10 minutes.
