1. Once the filling has set in the popsilce molds take them out and put them on the counter.
2. Melt white chocolate and coconut oil and put it in a mason jar.


3. Dip the popsicle in the mason jar and cover the popsicle in chocolate.
4. Sprinkle gluten free graham cracker crumbs on the popsicles and place them back in the freezer to set.

Key Lime Pie Popsicles (Gluten Free)
Ingredients
Filling
- 4 oz Cream Cheese Softened
- 7 oz Sweetened Condensed Milk
- ¼ tsp Lemon Juice
- ¼ cup Lime Juice
- ¼ tsp Lime Zest
- ¼ tsp Vanilla Extract
- ¼ cup Sour Cream
Coating
- 12 oz White Chocolate
- 1 TBSP Coconut Oil
Instructions
- Whip the cream cheese and sweetened condensed milk together until smooth.
- Whip in the remaining ingredients together and pour into popsicle molds. Smooth out the top and allow the filling to set in the freezer for a couple of hours.
- Remove frozen popsicles from the mold and place on a parchment paper lined cookie sheet.
- In a double broiler, heat the chocolate and coconut oil together.
- Dip the popsicle in the melted chocolate and place on the parchment paper. Sprinkle crushed graham crackers on top, re-freeze and enjoy.
