Cut the lemons and limes into quarters and place into the juicer.
Take the juicer discard and add Maple Sugar. Squeeze the discard and sugar together. Let it sit for 5 minutes to pull out more flavor from the discard.
Pour the discard and lemon/lime juice into a saucepan over medium heat. Bring the mixture to a simmer and let it simmer for 10 minutes.
Use a strainer over a bowl and train out the syrup. Pour the syrup into a dispenser and place tin the refrigerator to set.
