  1. Mix the dry ingredients together in a bowl. Whisk in the wet ingredients until well combined.
  2. Heat up the avocado oil to 375°F.
  3. Once the oil is heated, place ½ to ¾ a cup of batter into a cup and slowly pour a thin stream of batter into the oil. Overlapping previous pouring is great! It will naturally puff up and and fry in 30-60 seconds per side.
  4. Once fried, scoop out the funnel cake and place it on a drying towel.
  5. Optional: Top with powdered sugar.
